In our Slow Food restaurant where food is culture, savoured slowly and sustainability

Our Italian gourmet cuisine inspired by the peasant tradition of the Alps. In our restaurant “Alla Pineta”, Chef Mattia reinterprets family recipes with creativity and flair. Since 2013 we have been part of the Slow Food network: a certification that awards those who choose nature, small local producers, and food and wine culture. Vegetable gardens, forests and the local area are our first pantry: we select seasonal vegetables, wild herbs and local products to provide menus that follow the rhythms of nature.
The unmissable dishes in our gourmet restaurant: tips from the chef

The most representative salami in Val di Non. Try it in our restaurant “Alla Pineta” or during wine tastings in the Cantina del Bruno.
Tortel di patate (Potato Pancake)
A great classic of Trentino-Alto Adige cuisine. Try them as an appetiser, on their own, or as a main course accompanied by speck, local cheese and vegetables.
Gnocchetti smalzadi e i talleri di patate al formaggio locale
Two first courses by Mattia. Authentic taste and local ingredients.
Sliced Beef and Pork Cheek
Sliced beef with rocket salad and Agraria di Riva del Garda olive oil; pork cheek cooked in Teroldego wine with polenta and mushrooms.
Sicher Sacher, Nonna Elsa’s Strudel and Nonna Bianca’s Carrot Cake
Cakes by Chef Mattia. Familiar flavours and genuine ingredients.
Brezdel
Typical bread in the Alps. Try it every Thursday for breakfast.
Amaro del Checco
The original recipe of the patriarch of the Pineta.

Two awards, one philosophy: quality, the local area, Italianness
Being an Osteria Tipica Trentina and part of the Slow Food network is not just something to be proud of, but a responsibility we take on every day in the kitchen. Osteria Tipica Trentina certification attests to the authenticity of our gastronomic cuisine and the local origin of raw materials: traditional dishes prepared as grandma would have done. Slow Food recognition on the other hand, is an international symbol of sustainability and respect: it recognises those who protect biodiversity, choose local producers and give food the right time and value. Two certifications that speak one language: that of Italian hospitality, where every dish is culture, nature and the pleasure of sharing.
